Boulay - Boréal Bistro
Boulay – Boréal Bistro is the bistro operation of Chef Jean-Luc Boulay, Head Chef at Quebec City’s Saint-Amour restaurant and one of its owners since 35 years.
Nestled within the prestigious Hotel Manoir Victoria in the heart of Old Quebec, the bistro offers irresistible allure and ambience, with a healthy dash of Nordic spirit—it is elegantly decorated in black and white tones, offset with the warmth of wood. When LemayMichaud was asked to design this bistro, restoring the hotel’s historic façade was unquestionably one of the greatest challenges. The new façade, which had to receive advanced approval from Quebec City and its Architectural Heritage Department, nimbly combines Art Deco style with a contemporary feel.
